Okay, so I'm a bachelor --a bad one. People who know me think I'm a clean freak, when in fact I'm really a slob; they think I'm active when I'm lazy; and they believe I can cook when really I just follow directions on a package well.

The kitchen, of course, is one of my favorite rooms to spend time in. I delight myself in creating meals that only myself and possibly my cats can digest.

Despite my novice cooking skills, there are a few dishes I have "mastered" to a point that I feel somewhat comfortable sharing with others. Most of these recipes originated elsewhere, and I've given credit where appropriate.

Chicken Pepper Penne
A spicy pasta dish I created in an attempt to reproduce a local Italian restaurant's recipe.

Ma Po Tofu
Eating tofu is a leftover habit from my days as a pseudo vegetarian. This recipe is my variation of a Chinese favorite called "Ma Po Tofu."

Inspired by a discontinued menu item from Buca Di Beppo.

A 10 minute meal fit for the fledgling bachelor.

A white-trash favorite.

White Chili
People who make it usually win Chili awards --it's that good.

Sausage Quiche
In high school I ballooned up almost entirely due to this quiche my mother made. Thanks, Mom!

Puerco Pibil
Also known as Cochinita Pibil, this is a slow-roasted, spicy pork dish native to the Yucatan in Mexico.
