White Chili
I found this recipe at a great site called Jenny's Food Page. I believe Jenny pulled the recipe off a newsgroup somewhere, and I'm told it won first prize in a chili cookoff! It's good stuff. I've only made a couple slight modifications because the other ingredients were too damn expensive or time consuming to prepare.
1 large onion, chopped
2-3 cloves of garlic, minced
1 tbs. butter
2 cans chicken breast meat
2 small cans of green chilis (they are very tiny, sometimes in small jars)
2 tbs. ground cumin
1-2 tsp oregano
2 cups chicken broth
2 cans white hominy, drained (make sure it's the WHITE hominy!)
2 cans white beans (navy beans), 1 drained, 1 mashed with fork (that's one can, not one bean, smartass)
3-4 tbs. parseley
grated jalepeño or habenero jack cheese (depending on how much hair is on your chest)

In large pot, saute onion and garlic in butter until translucent. Add chicken, chilis and cumin; saute a few more moments.

Add broth, drained hominy, drained beans and mashed beans. Stir.

Simmer for about 30-40 minutes, stirring occasionally.

Add parseley and simmer 5 minutes. Sprinkle jack cheese to taste.

Serve with a dark lager or bock. Makes 4 servings.
